Citrus & Bright Coffees

Citrus profiles come most often from washed-process Ethiopian, Kenyan, and Burundi beans, lightly roasted to keep the juicy acidity intact. The Yirgacheffe and Sidamo regions of Ethiopia are especially associated with bergamot and lemon notes; Kenyan SL28 and SL34 varietals deliver the grapefruit and blackcurrant edge that makes these beans recognizable in a blind tasting.

Bright coffees demand fresh, properly-ground beans and clean water — they are the most sensitive collection on the site to brewing variables. A V60 with a 1:16 ratio at around 94°C (just off boil) gives them room to show. Espresso works only when the shot is dialed long; pulled short, the citrus reads as sour.
