“In 2019 the Altieri family noticed one tree on the slope at Mima Estate that did not behave like the others. Its cherries were ripening yellow instead of red, so they marked it and sent it off for genetic analysis. In 2020 the answer came back that it matched nothing in the reference database. They saved seed from that single tree and planted a dedicated plot at 1810 masl. The first real harvest came in 2026, and every bean carried the signature of an Ethiopian landrace. Mima's Gold is a brand new variety, named for its golden fruit and for the estate that found it. It is handled as a natural with a long, gentle finish. Four days on African beds under a drying greenhouse, two days sealed, then 35 days in a room held at a steady 18 degrees. The cup is bright and layered, with yellow plum and honeysuckle up front, mandarin behind them and sugarcane underneath. Mima's Gold took the Varietals category at Best of Panama 2026. Ours is a sister lot to the one that went to auction, and one kilo is all we have.”
