“A Red Bourbon from Wilton Benitez in Piendamo, Colombia, grown between 1,900 and 1,950 masl and sourced through direct trade. The cherries are dried in the fruit as a natural and the lot is then decaffeinated with a sugar cane process, which keeps the fruit-forward character of the natural up front while removing the caffeine. Mandarin, hibiscus, green apple and blackberry shape the cup.”
