“Hospura Estate sits in the Baba Budan Giri growing area near Chikmagalur, Karnataka - a 12-hectare farm managed by Zuheb Abrar, who studied civil engineering before choosing coffee. Coffee grows under a polyculture shade canopy of native and endemic trees that shelters birds and mammals including spotted deer and flying squirrel, and the estate treats specialty production as the way to keep the forest standing. For this washed Chandragiri lot, ripe cherries are hand-picked, hand-sorted and density-sorted; parchment ferments about 18 hours aerobically, is washed mechanically and dries for 15 days on raised beds and patios. Swerl's sourcing partner for India is Osito. Sweet praline, orange zest and white flowers, roasted for espresso at 1,300 m.”
