Specialty espresso has shifted in the last decade from blends-only into a single-origin space. Modern third-wave shots run 1:2 to 1:3 brew ratios at 91–94°C, with a 28–32 second extraction — a window where bright lots can show fruit clarity and traditional medium-darks deliver the chocolate-caramel comfort that espresso has always promised.

Beans in this collection match one of three patterns: an explicitly espresso-friendly roast level (medium-dark, dark, italian, french, vienna), a sweet flavor-note cluster (cocoa, caramel, brown sugar, hazelnut, syrup) that survives high pressure and short contact, or a natural / honey process at medium roast where the cherry sweetness rescues a lighter cup. Beans light-roasted with no sweet anchor are excluded — they read sour at espresso ratios and frustrate non-pro home users.
