“Jhonatan Gasca and his brother are the fourth generation of a coffee-growing family at Finca Zarza in Bruselas, Huila, where Castillo and Colombia varieties grow up to 1,925 metres. An anaerobic natural built around controlled sealed fermentation and thermal shock, it shows black grape, mulled wine and dark chocolate - a plush, wine-like filter profile from the experimental wing of Colombian processing.”
