“Guatemala's Santa Felisa Estate has been in the hands of the Meneses family since 1904, and siblings Anabella and Antonio now farm it in the Acatenango Valley. Ripe cherries are processed as a traditional natural, left whole to dry slowly on raised beds so sweetness and body build in the fruit. The variety is Oval Laurina, a delicate, slow-growing, low-caffeine mutation of Bourbon first discovered on Réunion Island, whose small elongated cherries give a softer, less bitter cup with pronounced natural sweetness.”
