Highlights
“Riakahara is one of 13 wet mills run by the Komothai Coffee Growers Cooperative Society in Kiambu, Kenya, and the cooperative's oldest factory, established in 1960 at around 1,750 metres. Smallholder members grow SL28, SL34, Ruiru 11 and Batian and deliver hand-sorted ripe cherry, which is pulped, fermented overnight, washed and graded, then dried slowly on raised beds for 8 to 14 days. Axil roasts it for filter: blood orange, blackcurrant, raisin and brown sugar, with the clean acidity and rounded sweetness the region is known for. Recommended recipe 6 g in, 100 ml out, 30 second bloom, 3:30 total.”
