“Santa Monica produced a remarkable expression of Chiroso, a rare Colombian variety first discovered in the cool, high-altitude mountains of Antioquia and recognised through Cup of Excellence competitions for its vibrant florals and complex fruit character. At Santa Monica, Jairo Arcila and his team selectively hand-pick only the ripest cherries before meticulously sorting and floating them to ensure exceptional quality. A final 45-hour aerobic fermentation and slow drying on raised beds over 8-12 days gave this lot its intense sweetness, juicy fruit notes and silky full-bodied finish.
