Decaf got good. Swiss Water (water-only, organic-friendly) and EA / Sugarcane fermentation-derived solvents strip caffeine while leaving most of the cup's character intact. The harsh hollow decaf cup of a decade ago is rare today. Naturally low-caffeine varietals like Laurina (about half the caffeine of regular Arabica) are now showing up in specialty lineups.
Filters down to anything in the catalog whose process or roaster note marks it as decaf, half-caf, low-caf, Swiss Water, or EA-processed. Cup character tracks the underlying bean — a Swiss Water Ethiopian still tastes Ethiopian.
