“Guarapo is Swerl's espresso-roast decaf, built from coffee delivered by Monkaaba shareholders in San Agustín and Ricabrisa, Huila, grown between 1650 and 2000 masl and washed before decaffeination. The seeds go to Descafecol, where they are steamed, moistened and submerged in a sugarcane-derived ethyl acetate solution that strips caffeine while, in Swerl's words, augmenting rather than detracting from the cup. Swerl tastes tiramisu, freshly made donuts and macadamia, and the project buys the shareholders' cherry at a differentiated price every harvest.”
