“A Mountain Water Process decaf from the CAFECO cooperative, 540 smallholder farmers working 1,441 hectares around Ejido Nuevo Paraíso, La Concordia, in Chiapas. The washed green coffee is steamed and rinsed with pure spring water from Pico de Orizaba to remove 99% of caffeine without chemical solvents, then re-introduced to the bean so the origin character survives. Coffee cherry, caramel and chocolate chip cookie in the cup.”
