“Finca La Roma sits in Fresno, Tolima, Colombia, and is linked to producer Emanuel Enciso, who comes from a family of coffee growers. In 2016 he and his family built a processing centre serving producers from several communities in the area, and since 2019 it has run as the Black Condor Project in partnership with Forest Coffee. This 2026 Caturra lot was grown at roughly 1,450 metres, washed, then decaffeinated with the sugarcane method — also called the EA process — in which ethyl acetate derived from sugar-cane ethanol binds and removes caffeine before the beans are rinsed and re-dried.”
