Tropical Coffees

Tropical profiles emerge from natural-process and honey-process coffees with extended fermentation, most commonly from Colombia (especially Huila and Cauca), Costa Rica, Ethiopia, and increasingly from Indonesia and Brazil. The fruit comes from sugars that stay with the bean during a long, controlled drying phase — a winemaking-adjacent technique that has reshaped specialty coffee over the last decade.

These beans cup heavy and sweet. They brew well as filter when you want the fruit clarity, and as espresso when you want the body. A 1:15 ratio with a 30-second bloom on V60 lets the tropical notes layer; pulled as espresso the shot tastes like fruit syrup with caffeine. Tropical bags hold their flavor longer than the Fruity & Sweet collection — three to four weeks past roast still reads sweet and juicy.
