Finca Milan Maypop Espresso

Highlights

“Maypop comes from Julio Andres Quiceno and Julio Madrid at Finca Milan in Colombia, where Julio Andres has spent years working out which yeasts pair best with which fruits and how those pairings interact with the coffee itself. For Maypop he ferments Caturra with fresh pineapple and passionfruit using yeasts selected for those two fruits, then tailors the fermentation to the variety so the Caturra's own character still shows through the fruit. The cup is loud and clear on that fruit, which is the point: a little rose, plenty of pineapple, mango-candy sweetness, and just enough acidity to balance it. This is the espresso roast of the pair, for anyone who wants that fruit under pressure.”
