Highlights
“Finca Potosí sits in Caicedonia, Valle del Cauca, between 1,560 and 1,835 masl, and the Cafe Granja La Esperanza team hand-selects every cherry at peak ripeness. Cherries are floated in a water bath to keep only the most vibrant fruit and the sweetness of each batch is measured before fermentation, which runs 48 hours in open tanks and then a deeper 72 hours in sealed tanks. Drying is mechanical at a steady 38°C for three to five days, followed by climate-controlled storage at 18–19°C until roasting. Rogue Wave's tasting notes: melon, mango, peach, violet, lime and blackberry. This Sidra Natural is a Secret Drop release in a 100 g bag.”
