“Luis Muños is a young, second-generation producer from Gaitania, Tolima, who spent much of his early life managing his family's farm and those of neighbours before establishing his own. In 2016 he won the regional competition La Mejor Suavidad. This 100% Pink Bourbon separation is the first release from a new project in Gaitania. Cherries were hand-picked at peak ripeness, floated, held in cherry for 48 hours, de-pulped, then fermented for a further 60 hours before washing and drying on raised beds to roughly 10% moisture.”
