“Kedida Gubata is a high-elevation separation from Sey's export partners at SNAP, now in the roaster's second year working with the lot; this year Sey chose to offer it as a white honey process. The cherries were sourced from specific high-elevation farms in the Kochere area and processed at the nearby Worka washing station, a site Sey has bought from many times. They were hand-picked at peak ripeness, floated to remove defects, de-pulped and density-separated to Grade 1, then dried as a white honey on raised beds for 10-14 days.”
