Highlights
“Halo Hartume has become an integral part of Sey's work in Gedeb, and the site not only produces its own coffee but also helps process cherry from isolated areas nearby. Worasa Mijane, a native of Gedeb, began processing coffee in the early 2000s at his first site in Worka Sakaro; nearly a decade later, in 2013, he and his son Daniel established a second washing station at Halo Hartume, a few kilometres to the west. The 2nd Selection is hand-picked at peak ripeness, floated, held in cherry for 12 hours in shade, de-pulped and dry-fermented in plastic barrels for 12 hours, then wet-fermented for another 12 hours, hand-washed to remove mucilage only and dried in shade to roughly 10% moisture.”
