“Guiliar Cuéllar spent most of his life working on coffee farms before saving enough to buy his own land - a small plot from his father-in-law plus an adjacent parcel, planted immediately with 1,000 Pink Bourbon trees. This is the second harvest pass Sey has purchased from him this season. Cherries were held in-cherry for 24 hours, de-pulped, dry-fermented for 48 hours, washed and dried on raised beds to 10.5% moisture.”
