“Demeka Becha is a washing station on a hilltop near the village of Becha in Bona Zuria, Sidama, owned and operated by Ayele Tulu with his wife Genet Haile Endeshow and their son Tsegab Ayele. It buys cherry from nearly 10,000 producers across Dilla Suke, Demeka, Goacho, Becha and Bashiro Dale. Cherries are hand-picked at peak ripeness and floated, de-pulped, density-separated to Grade 1, dry-fermented for 36 hours and dried on raised beds for 10-14 days.”
