“Working with long-time Ethiopian export partner SNAP, Sey asked for a separation of only the cherry delivered from the highest-elevation plants at the Chorso Bule site in Gedeb. SNAP named it the Highest Elevation Project, and Chorso Bule was the first site recommended for the approach. Cherries were hand-picked at peak ripeness, floated, held in cherry for 24 hours, de-pulped, density-separated as Grade 1, dry-fermented for 24 hours, wet-fermented without submersion for a further 12 hours, then dried on raised beds for 10-14 days.”
