“Carlos Estrella built this lot from cherries harvested on two sub-plots of his farm, La Jacoba and El Mirador - the plots where he planted geisha and other exotic varieties, the first grower in La Unión to do so. Cherries were hand-picked and mechanically pulped, then fermented anaerobically for 48 hours with the mucilage intact before 20-22 days of drying.”
