“Jorge Rojas' barely-processed 16-hour washed geisha went to Prodigal's monthly subscribers in July, and the limited reserve is now released. Grown at El Jardín, a 7-hectare farm in Tolima, the coffee is floated to remove defects, pulped immediately, fermented without water for just 16 hours, then washed and dried in a deliberately slow process with three rest periods over 15 days to protect volatile aromatics.”
