“Named for the Danche washing station in Gedeb, this lot comes from roughly 800 farmers delivering cherries grown on two to three hectare plots at 2,200 metres. Only ripe cherries were picked, then floated to remove defects, pulped, dry-fermented for 96 hours and fully washed before 12-14 days of drying on raised beds.”
