“The Azucena-lot comes from Puente Solaya in the Callayuc district in the Cutervo province of Cajamarca, Peru, where coffee cultivation is recent. 'Puente' means bridge in Spanish, and Solaya is the hill separating the two communities where this lot is sourced. The lot is a washed WX (traditionally washed) coffee: cherries are submerged for 48 hours, then dried for 15 days. It scored 87.0 in quality evaluation, optimized for filter brewing. Sensory profile: aroma of apricot and vanilla; flavors of milk chocolate, vanilla, and yellow plum; aftertaste of honey and yellow plum with mid intensity; malic acidity with mid intensity; light juicy body; uniform balance.”
