“Mi Finquita is the Hartmann family's farm in Los Pozos, Boquete, in Panama's Chiriquí highlands, growing between 1,650 and 2,000 metres. Substance bought directly from Ratibor and Tessie Hartmann for the 2025 crop, the first time the cafe has had the chance to work with them. The Geisha cherries dry as a natural for 15 to 22 days. Substance cups every lot in V60 and found mango and passionfruit while hot, then yellow peach and tropical fruit, with papaya joining the mango as the cup cooled; full-bodied, juicy and only lightly fermented. Sold in a 100 g bag at €50, out of stock as of 7 November 2026.”
