- Looking for a sweet acidity, a coffee that is as tangy as sugar.
- Extraction time: 3:15 - 3:45.
- The first and last pours are very important, the two in the middle are less so.
- The goal is to increase the contact surface between the coffee and the water.

Pour between 160ml. (pouring with turbulence)

Increase to 200 (pouring with turbulence)

Total brew time, aiming for 3:15 to 3:45 (195-225 seconds).
