Highlights
“Iris Estate, in Boquete, Chiriquí, is farmed at 1,800 to 2,300 metres by Jamison Savage with Sasa Sestic and Elvin Siew. Terroir is the washed Geisha: cherries picked above 21 Brix with the fruit removed in low-water milling equipment, then shade-dried for more than ten days in the dry-house so the parchment releases moisture slowly. After drying to 10.5-11% the coffee rests in grain-pro for up to 90 days, then is hulled, sorted for density, size, shape and colour, vacuum packed and boxed. Substance buys directly from Jamison and says the young farm gets better every year. 2025 harvest, 100 g at €50, out of stock as of 7 November 2026 with a roast date of 10/07/2026.”
