“Iris Estate sits in Boquete, Chiriquí, between 1,800 and 2,300 metres, and is farmed by Jamison Savage with Sasa Sestic and Elvin Siew. Illumination is the Savage Coffee process name for a carbonic maceration washed Geisha. Substance tasted the very first batch a few hours after roasting and found it floral and complex, with a beautiful passionfruit-like acidity; they were impatient to retaste after a week of rest. 2025 harvest, 100 g at €50, out of stock as of 7 November 2026 with a roast date of 15/06/2026.”
