“Finca Sophia is Willem Boot's farm in Boquete, Chiriquí, managed by Kelly Hartmann and sitting at 1,956 metres. This is one of the farm's very first honey lots after 18 years of washed and natural production; cherries were harvested on 21 April 2025 in the Ciprés area, next to Piedra, where a stand of cypress trees gives shade but dries the soil around them. Finca Sophia calls FS12225 a nuanced blend of red and yellow fruits, bergamot orange and wildflower florality that straddles washed and natural profiles. Substance bought directly and visited the farm in 2024. 50 g at €50, limited to one bag per order, out of stock as of 7 November 2026 with a roast date of 10/08/2026.”
