“Finca Sophia is Willem Boot's farm in Boquete, Chiriquí, managed by Kelly Hartmann, and lot 120 is one of the very first honey Geishas the farm has made in 18 years. It comes from Ciprés, the area next to Piedra where a stand of cypress trees shades the coffee but dries the surrounding soil, and the cherries were harvested on 21 April 2025 at 1,956 metres. Finca Sophia describes FS12025 as clean and crisp, straddling washed and natural, with delicate honey aromas, sweet nectar-like yellow fruits, tart tamarind and coffee blossom florality. 50 g at €55, limited to two bags per order, out of stock as of 7 November 2026 with a roast date of 02/11/2026.”
