Highlights
“Jamison Savage's Finca Deborah sits in Boquete, Chiriquí, at 2,000 metres, and Illumination is the name he gives this carbonic maceration washed Geisha. Cherries are picked at 21-24 Brix and selected a second time, then pulped with a share of fruit left on the seed and held in CO2-infused tanks with pH, temperature and CO2 logged, before shaded drying on raised African beds. The coffee dries to roughly 11% and rests in grain-pro, which Finca Deborah treats as part of quality control, before hulling and sorting by size, density, colour and shape. Substance visited in 2017 and 2024 and finds jasmine and passionfruit in the cup. 100 g at €55, out of stock as of 7 November 2026 with a roast date of 01/06/2026.”
