“Wachile Garse is a station at Garse village in the Gedeo district of Yirgacheffe, run by DWD, a family business set up over 30 years ago that buys from 110 smallholders and works with them on quality year after year. The cherries grow above 2,060 metres and dry as naturals in the shade on raised beds for three weeks, turned regularly for even drying. Substance tasted it a day after roasting and got citrus, lemon, violet and blueberry in what they describe as a very sweet coffee with a textbook Yirgacheffe profile.
