Highlights

“Standout's first Yemen selection features Yemenia, a recently identified Coffea arabica population found only in Yemen. Processed through Qima's Alchemy method — controlled aerobic fermentation, extended carbonic maceration in stainless steel tanks, semi-anaerobic rest, and 25-day slow drying on raised African beds — the result layers tropical sweetness and floral complexity. Coffee has been cultivated in Sana'a's mountains for over six centuries, and this lot carries that heritage into an intensely layered, wine-like cup.”
