“Ebert Hauman Villegas leads Finca Artemira in Peru's Cajamarca region at 1900 MASL, where he combines regenerative farming with careful varietal development. Since taking over the family farm, he has focused on biodiversity and agroforestry, cultivating Geisha, Pink Bourbon, and Marshell. The Marshell variety is a rare Catimor-derived expression that won Peru's 2019 Cup of Excellence and has since become one of the country's most interesting emerging varieties. For this lot, whole cherries undergo a carefully controlled double anaerobic washed process: sealed-tank fermentation before depulping, followed by a second slow fermentation stage, then washing and slow solar drying over multiple weeks. Ebert's work has already gained recognition in both Expo Cajamarca and the Cup of Excellence.”
