“Not every exceptional coffee needs to come from a single famous farm. El Rubí is a reminder that some of the most compelling coffees in Colombia today are being shaped by communities of producers working with the same ambition, discipline and understanding of quality. We selected this coffee because it shows what Planadas, Tolima can produce when careful smallholder farming is brought together with clear standards. In the cup, bright citrus and ripe stone fruit are layered with red berries and panela sweetness. The structure is juicy and transparent, with delicate florals, a silky texture and a long, refined finish.”
