- Rest: about 2-3 weeks off roast
- It avoids making the grind finer to compensate for the quicker flowing coffee often associated with natural processed coffees.
- Grind size: medium, about the size of sea salt

Add coffee and gently pour 60 grams of water in concentric circles for the bloom.

Pour water up to 200 grams from a medium height to create some agitation.

Begin a very gentle pour up to 320 grams just before all the water leaves the coffee bed from the second step. Take your time and pour very slowly.
