“Finca Hartmann, founded in 1940 by Ratibor Hartmann, is a pioneer of specialty coffee in Panama. This lot comes from Rocky Mountain (Rocosa Montaña), managed by Allan Hartmann. The variety is a hybrid cross between Amaro Gayo (an Ethiopian landrace) and Geisha, originally named in honour of Hartmann Sr., known as Don Chicho. Cherries were dried on African beds for 12-14 days, then finished in drying silos, and rested for three months before hulling.”
