“Smallholder families in the Montebonito community cultivate Castillo Naranjal at elevations up to 2,100 meters, where cold nights and warm days create ideal growing conditions. A 12-14 hour aerobic fermentation followed by 30 days of GrainPro stabilization develops clean structure and allows flavors to fully mature. The Reforest project extension here represents one of the first examples of how specialty education is opening new paths for this traditional community.”
