Highlights
“Las Palmas is Brayan Alvear's farm in San Adolfo, Acevedo, in Colombia's Huila department, where Caturra grows at 1,600 metres. For this lot cherries are sealed for 36 hours of controlled oxidation, dry pulped, then fermented again with leachate and a mother culture that is finally blended with pineapple juice across two further 36-hour stages before 10-15 days of patio drying.”
