“From Las Marias Estate, the newest farm of the Giraldo family in Pijao, Quindío. The land had been abandoned for 20 years with 7,000 trees of 70-year-old Typica. The family recovered those trees and planted Geisha from Panama seeds. Only finest cherries selected at peak ripeness (brix >22) fermented 96 hours in CO2 sealed tanks, then slow dried 40 days.”
