“This natural-processed Catiope comes from Finca Laderas del Tapias, an estate that has grown coffee in Colombia's Tapias River Canyon since the 1930s. Catiope is a first-generation hybrid of Caturra and an Ethiopian landrace from the CATIE collection. The farm sits in Neira, Caldas, where four farms - Buenos Aires, Puerto Rico, La Graciela and Villa Ines - come together within the UNESCO-recognized Coffee Cultural Landscape. Coffee grows between 1,650 and 2,000 metres in rich volcanic soils; of the estate's 106.4 hectares, 70.4 grow coffee and 25 are kept as forest. Rodrigo Alberto Pelaez has farmed Laderas del Tapias since 2000 and turned his focus to specialty coffee in 2014; the farm's name means 'Hillside of Tapias,' after the nearby river. Recommended rest 2-3 weeks; filter 1:16-17 at 94C; espresso 1:2.5-2.7 at 90C for 26-30s.”
