Diofanor Ruiz purchased the farm in 2005 and maintains diverse fruit trees and native species. Cherries are selectively hand-harvested, sorted, floated, then undergo 45 hours of aerobic fermentation before 11 days on raised beds to 9.5-11% moisture.”
