“Kagunyu is one of three washing stations run by the Rumukia Farmers' Cooperative Society in Nyeri, Kenya, and it receives cherry from roughly 600 smallholders farming the volcanic soils between Mount Kenya and the Aberdare range. Ripe cherry is sorted before depulping, then fermented, washed and dried on raised beds, the standard Kenyan recipe that produces clarity and bright acidity.
