Tips & Preparation
- Target brew time is around 2 minutes, plus 1 minute drain.
- Water temperature should be above 90.6°C (90.6°C) or just under boiling.
- Pouring Schematics:
- Bloom with 50g water for 30 seconds.
- At 30 seconds, pour 100-120g in concentric circles.
- In 15-second increments, pour 60g water, maintaining bed depth.
- Aim to hit 400g before 2 minutes.

1st Pour: bloom with 50g water, saturating the entire bed. Use a a spoon stir to ensure saturation.

2nd Pour: 120g in 6 concentric circles, lifting the bed near the top of the Kalita Wave.

3rd Pour: 60g in 3 circles the same concentric pour pattern.

4th Pour: 60g in 3 circles the same concentric pour pattern.
1:15
5th Pour: 60g in 3 circles the same concentric pour pattern.
1:45
Final 6th Pour: Top off to 400g.
