“Frinsa Estate is a farm and exporter on Java that Kurasu has worked with for years, and Weninggalih is the plot at Gunung Cupu in Pangalengan, Cikole, West Java, sitting between 1,300 and 1,500 metres. Cherries are washed and floaters removed before pulping, then water and lactobacillus are added to the wet parchment for an overnight fermentation in plastic tanks. Kurasu roasts it light: floral aromatics, plum and Chinese tea, cashew nuts and a dried-mango sweetness that lingers.”
