MAME Championship KISS Switch Recipe
"Mane’s cafe basic recipe. A simple, forgiving immersion-based Hario Switch recipe designed for clarity, sweetness, and high intensity in competition coffees."
Suki (Mame)
Tips & Preparation
- Background Knowledge:
- Developed for the 2024 Brewers Cup.
- KISS stands for Keep It Super Simple.
- Preparation:
- Recommended water quality: 80-100 ppm TDS.
- Switch material choice: Glass emphasizes acidity; black ceramic emphasizes sweetness.
- Adjustments:
- For a lower dosage/intensity, extend the immersion time.
- If ground too fine, bypass the brew.
- Double immersion can be used if brewing smaller portions or needing to save a brew.
- Notes:
- High agitation/turbulence is encouraged during the pour.
- The long two-minute wait at the end helps cooling and flavor clarity.
