Tips & Preparation
- Coffee: Pink Lady blend (washed and natural Ethiopian coffee)
- Grind: Medium-fine, similar to kosher salt (Baratza Encore setting: 16)
- Brewer: Kalita Wave (stainless steel preferred for durability)
- Water Temperature: 96.1-97.2°C (96.1-97.2°C), or just off boil
- Pre-wetting: Rinse filter to preheat vessel
- Tasting: Stir the coffee before tasting to mix sediments
Recipe Steps

Pour 50g of water to saturate the coffee bed for the bloom.

Pour 200g of water in a circular motion, starting in the center and moving outwards.

Pour an additional 100g of water.
2:00
Pour the remaining 100g of water, continuing the spiraling motion.

Aim for a total brew time of around 3 minutes and 30 seconds.
