Recipe Steps
Place filter in brewer and rinse with hot water to adhere it to the ridges. Grind 18g of coffee to a medium-fine consistency and create a loose divot in the center of the coffee bed.

Pour 54g of boiling water:
from a height, breaking the stream above the coffee bed, to saturate the grounds. Swirl aggressively to ensure no clumps remain.

Pour the remaining water (252g) :
heavily from a high position until just below where the coffee grounds hit the filter. Then, slow down and pour in small circles up to 306g.

Gently stir the very top layer of the slurry with a stick to push fines to the sides of the filter and prevent boulders. Swirl gently to flatten the bed.

Allow the coffee to drain completely. Total brew time is about 3: 50.
